Veggie and Egg Muffin

Ingredients: Serving size: 12
6 eggs
¼ cup onions
½ cup peppers
½ cup tomatoes
Salt and pepper to taste
Oil
Other veggies (optional: mushrooms, spinach, broccoli, etc.)
Instructions:
Preheat oven to 350F degrees and get out a muffin tin pan
Peel onion and chop. Chop peppers and tomatoes.
Coat muffin tin pan with oil.
Get out a bowl and whisk eggs, pepper, and salt.
Add veggies to egg mixture and stir.
Add mixture to muffin cups, about ¾ full.
Bake for 25 minutes. Allow muffins to sit 5-10 minutes then serve.
