Veggie and Egg Muffin

Ingredients: Serving size: 12

  • 6 eggs

  • ¼ cup onions

  • ½ cup peppers

  • ½ cup tomatoes

  • Salt and pepper to taste

  • Oil

  • Other veggies (optional: mushrooms, spinach, broccoli, etc.)

Instructions:

  • Preheat oven to 350F degrees and get out a muffin tin pan

  • Peel onion and chop. Chop peppers and tomatoes.

  • Coat muffin tin pan with oil.

  • Get out a bowl and whisk eggs, pepper, and salt.

  • Add veggies to egg mixture and stir.

  • Add mixture to muffin cups, about ¾ full.

  • Bake for 25 minutes. Allow muffins to sit 5-10 minutes then serve.
