Sweet Potato Tacos

Ingredients: Servings: 6

  • 6 small sweet potatoes, or 3 large cut in half (can use other potatoes)

  • 1 can black beans (any beans work)

  • 1 can corn

  • 1 can diced tomatoes (can be with peppers)

  • Various spices to taste (salt, pepper, paprika, cumin)

  • Optional: Any toppings you have on hand

Instructions

  • Preheat oven to 425 degrees

  • Poke potatoes with a fork and bake on a baking sheet for 45 minutes (until soft)

  • In a pan, add drained beans, corn, tomatoes, and spices to taste

  • Cut potatoes lengthwise and mash insides to create room for mixture in the pan

  • Add mixture to the potatoes and serve
