Fish Burgers

Ingredients: Serving Size: 4

  • 16 oz (about 4 cans) drained canned fish (tuna or salmon)

  • 2 tablespoons mustard

  • 2 eggs (2 tbsp oil for one egg substitute)

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tbsp oil

  • Cut up zucchini, squash, or onion (optional)

Instructions

  • Mix all ingredients (other than oil) together in a bowl

  • Divide mixture into 4 balls and flatten into patties

  • Heat oil in a pan over medium heat

  • Fry burgers in the pan until golden brown on both sides.

  • Serve as a burger or on top of rice
