Breakfast Burritos

Ingredients: Serving size: 3
3 tablespoon of oil
1 cup of onion
1 cup of red or green bell peppers (optional)
1 cup canned black beans
3 tortillas (of your choice)
3 eggs (optional)
Shredded cheese (optional, any kind)
Instructions
Rinse off peppers and chop.
Peel onion and chop onion.
Get out a medium saucepan and saute the peppers and onions using the oil.
Add the black beans to the vegetables and continue to saute for 1 minute.
Add the vegetables and beans to the tortillas, separating equally. Sprinkle shredded cheese on top if desired.
If you wish to use the eggs, scramble the eggs and cook them in the same saucepan. Add eggs to tortillas once fully cooked.
Wrap the burrito and serve.
Note: also can add these ingredients: mushrooms, tomatoes, carrots, corn, spinach
