Breakfast Burritos

Ingredients: Serving size: 3

  • 3 tablespoon of oil

  • 1 cup of onion

  • 1 cup of red or green bell peppers (optional)

  • 1 cup canned black beans

  • 3 tortillas (of your choice)

  • 3 eggs (optional)

  • Shredded cheese (optional, any kind)

Instructions

  • Rinse off peppers and chop.

  • Peel onion and chop onion.

  • Get out a medium saucepan and saute the peppers and onions using the oil.

  • Add the black beans to the vegetables and continue to saute for 1 minute.

  • Add the vegetables and beans to the tortillas, separating equally. Sprinkle shredded cheese on top if desired.

  • If you wish to use the eggs, scramble the eggs and cook them in the same saucepan. Add eggs to tortillas once fully cooked.

  • Wrap the burrito and serve.

  • Note: also can add these ingredients: mushrooms, tomatoes, carrots, corn, spinach
