Baked Brussel Sprouts and Potatoes

Ingredients: Serving size: 3-4

  • 1 lb brussels sprouts

  • 1 lb red potatoes

  • 1 onion

  • 2 tablespoons vinegar

  • 2 tablespoons oil

  • ½ teaspoon of oregano (optional)

  • Salt and pepper to taste

Instructions:

  • Preheat oven to 400F degrees.

  • While oven is preheating, cut the brussels sprouts in half. Cut the potatoes in fourths. Peel and cut the onion into chunks.

  • Put the potatoes, onions, and sprouts onto a baking sheet.

  • Whisk the vinegar, oil, salt, pepper, and oregano in a bowl. Add the mixture to the vegetables and mix vegetables well.

  • Put in oven and bake for 15 minutes. Then, stir the vegetables. Bake for another 15 minutes.

  • Note: can use any potatoes, and can use any other desired vegetables
