Baked Brussel Sprouts and Potatoes

Ingredients: Serving size: 3-4
1 lb brussels sprouts
1 lb red potatoes
1 onion
2 tablespoons vinegar
2 tablespoons oil
½ teaspoon of oregano (optional)
Salt and pepper to taste
Instructions:
Preheat oven to 400F degrees.
While oven is preheating, cut the brussels sprouts in half. Cut the potatoes in fourths. Peel and cut the onion into chunks.
Put the potatoes, onions, and sprouts onto a baking sheet.
Whisk the vinegar, oil, salt, pepper, and oregano in a bowl. Add the mixture to the vegetables and mix vegetables well.
Put in oven and bake for 15 minutes. Then, stir the vegetables. Bake for another 15 minutes.
Note: can use any potatoes, and can use any other desired vegetables
